Citrus & Cilantro Tahini Marinade & Dressing

Simply put: this is legit one of the most delicious marinades/dressing I've ever tasted! And so easy! |
Ingredients (screenshot for an easy shopping list):
Marinade/Dressing (message @ravitaldar for the original recipe):
- 3 tbsp tahini (organic, unsalted)
- 5 tbsp lime Juice
- 10 tbsp lemonade (fresh, organic)
- 3 garlic cloves (roughly diced)
- 1 small bunch of cilantro
- cumin, salt & pepper (to taste)
Vegetable Suggestions (cut into thick chunks, enough to half-fill one 9" x 12" baking pan) :
Blend all marinade/dressing ingredients in a high-powered blender. |
Pour enough of the marinade to coat the vegetables, saving enough for the salad. |
Mix the marinade and vegetables thoroughly. If you are adding tofu/seitan, add that too. Put the pan into the refrigerator, then... |
... maybe get on a boat (San Diego to Coronado Ferry) ... |
... or ride a bike (Silver Strand bike trail)... In other words, let the veggies and tofu/seitan marinate for a few hours. |
Serve with a starch, such as tortillas, rice or couscous. |
