Cheezy JUST Egg & Cauliflower Breakfast Casserole

Vegan.  Healthy.  Delicious.  Easy.





Ingredients List (screenshot for an easy shopping list):

- JUST Egg (1 bottle)
- Gimme Lean Veggie Sausage (3/4 package)
- Benevolent Bacon (2 strips)
- Cauliflower (1/2 head)
- Daiya Cheddar Style Shreds (1/4 cup)
- Follow Your Heart Parmesan (1/8 cup)
- Onion (2 thick slices)
- Unsweetened "milk" (1/4 cup)

Nutrition Information (1/8 recipe):

- 160 calories
- 13 g protein
- 11 g carbs (4 g fiber, 2 g sugar)
- 7 g fats (0 g sat fat, 0 g cholesterol)





Brown the sausage over medium heat until cooked through.



Saute the onion over medium-high heat until slightly translucent.



Steam the cauliflower until tender, but still slightly crisp.



Mix the sausage, onion & cauliflower and cook over medium heat
until cauliflower is cooked tender, about 5 more minutes.



Put the mixture into a baking pan, evenly pour the bottle of JUST Egg and
top with small pieces of the bacon.



Top with cheezes, then bake at 350 degrees F for about 20-25 minutes,
or until the egg is thoroughly cooked and the cheese is melted.

Top with vegan sour cream, guacamole and hot sauce, and serve with sourdough toast with vegan butter.  This makes a hardy, comforting breakfast, in about 45 minutes from knife to table!
