Butternut Squash - Sweet Potato - Red Bean Chili

- 1/2 butternut squash
- 1 large sweet potato
- 2 small slices of white onion
- 1 small can of red beans
- 2 small cans of tomatoes
- 1 cup vegetable broth
- 2 tbsp olive oil
- 6 cloves minced garlic
- 1 bottle pale ale beer
Spices (all measurements are approximate, adjust to your personal tastes):
- 1/2 tsp sea salt
- 1/4 tsp ground black pepper
- 1/2 tsp cayenne chile pepper
- 1/4 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/2 cup salsa
- several dashes of Tabasco or hot sauce

Chop squash, sweet potato and onion into small bite-sized cubes. |
Saute the onion over high heat in 1 tbsp of the olive oil, about 5 minutes, until translucent. |
Add the squash & potato, plus one more tbsp of the olive oil, and cook over medium-high heat for about 5 minutes, until slightly softened. |
Add the garlic and saute over medium heat for about 5 minutes, until the garlic is slightly browned. |
