Butternut Squash - Sweet Potato - Red Bean Chili

Vegan.  Healthy.  Delicious.  Easy.  



Ingredients List (screenshot for an easy shopping list):

- 1/2 butternut squash 
- 1 large sweet potato 
- 2 small slices of white onion
- 1 small can of red beans
- 2 small cans of tomatoes
- 1 cup vegetable broth
- 2 tbsp olive oil
- 6 cloves minced garlic
- 1 bottle pale ale beer

Spices (all measurements are approximate, adjust to your personal tastes):

- 1/2 tsp sea salt
- 1/4 tsp ground black pepper
- 1/2 tsp cayenne chile pepper
- 1/4 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/2 cup salsa
- several dashes of Tabasco or hot sauce

Nutrition Information (1/4 recipe):

- 335 calories
- 9 g protein
- 38 g carbs (10 g fiber, 10 g sugar)
- 5 g fat (1 g sat fat, 0 g cholesterol)

Chop squash, sweet potato and onion into small bite-sized cubes.


Saute the onion over high heat in 1 tbsp of the olive oil, about 5
minutes, until translucent.


Add the squash & potato, plus one more tbsp of the olive oil, and cook
over medium-high heat for about 5 minutes, until slightly softened.


Add the garlic and saute over medium heat for about 5 minutes, until the
garlic is slightly browned.


Add all other ingredients, bring to a boil, then lower to simmer for at least one hour,
to allow the flavors to meld.  Adjust spice levels per your personal taste.

Top with guacamole, vegan sour cream, hot sauce, diced raw onion, cilantro and/or tortilla chips.  This is a very satisfying meal that's so easy to make!
