High Protein Tofu Scramble
Vegan. Healthy. Delicious. Easy.
Ingredients List (screenshot for an easy shopping list):
- 1 tbsp olive oil
- 16 oz High Protein Tofu
- 2 tbsp nutritional yeast
- 1 tsp salt
- 1/4 tsp ginger
- 1/4 tsp garlic powder
- 2 tbsp unflavored & unsweetened milk
* Note: Add other ingredients, per your usual scrambled egg preferences, such as:
- mock bacon or sausage
- green peppers & onions
- mock cheese
Nutrition Information (per quarter recipe):
- 294 calories
- 22 g protein
- 6 g carbs (1 g fiber, 0 g sugar)
- 15 g fats (2 g sat fat, 0 g cholesterol)
Smash the tofu with a potato masher and saute on medium-high heat in the olive oil until the excess water is evaporated. |
Add all of the ingredients and continue to cook over medium heat until the tofu is at your desired consistency. |
I served it garnished with cilantro and a side of black beans + chunky salsa & Dave's Killer Powerseed Bread + guacamole. |
What a delicious and healthy breakfast. And it's ready in only about 20 minutes!
