High Protein Tofu Scramble

Vegan.  Healthy.  Delicious.  Easy.


Ingredients List (screenshot for an easy shopping list):

- 1 tbsp olive oil
- 16 oz High Protein Tofu
- 2 tbsp nutritional yeast
- 1 tsp salt
- 1/4 tsp ginger
- 1/4 tsp garlic powder
- 2 tbsp unflavored & unsweetened milk

* Note: Add other ingredients, per your usual scrambled egg preferences, such as:
- mock bacon or sausage
- green peppers & onions
- mock cheese

Nutrition Information (per quarter recipe):

- 294 calories
- 22 g protein
- 6 g carbs (1 g fiber, 0 g sugar)
- 15 g fats (2 g sat fat, 0 g cholesterol)

Smash the tofu with a potato masher and saute on medium-high heat in the olive oil until the excess water is evaporated.


Add all of the ingredients and continue to cook over medium heat until the tofu is at your desired consistency.


I served it garnished with cilantro and a side of black beans + chunky salsa & Dave's Killer Powerseed Bread + guacamole.


What a delicious and healthy breakfast. And it's ready in only about 20 minutes!
