Good Old Fashioned Scrambled Eggz 

Vegan.  Healthy.  Delicious. Easy.

Scrambled Eggz:

- 2 servings (20 oz) VeganEgg
- 1 serving (56 g) Lightlife Gimme Lean Sausage
- 1/2 serving (50 g) Firm Tofu
- 1 serving (28 g) daiya Cheddar Style Shreds
- 1 slice of yellow onion
- 1/4 red bell pepper
- 1/2 jalapeño pepper

Side Items:

- 1/2 Dave's Killer Bread Epic Everything Organic Bagel
- 1/2 serving (15 g) Daiya Chive & Onion Cheeze Spread
- 1/2 cup Potato (with peel)
- 1/4 Avocado (medium size)

Scrambled Eggz (1/2 recipe):

- 194 calories
- 16 g protein
- 17 g carbs (6 g fiber, 3 g sugar)
- 8 g fats (2 g sat fat, 9 g cholesterol)

Side Items:

- 293 calories
- 8 g protein
- 45 g carbs (6 g fiber, 3 g sugar)
- 10 g fats (4 g sat fat, 0 g cholesterol)

Cooking Instructions:

Make 2 servings of VeganEgg, by mixing 20 g of powder + 1 cup cold water, then whisking briskly.


Cut 1 serving of GimmeLean into chunks and brown lightly in olive oil over medium-high heat.


Slice the browned GimmeLean and raw veggies into small pieces.


After slicing the other ingredients, begin cooking the VeganEgg over medium-high heat.
Your goal is for most of the water to boil off slowly.


As the eggz cook, saute the GimmeLean + veggies until crisp-tender.


While the other items cook, crush the tofu into small bits.

Once most of the water is cooked out of the eggz, add the tofu and thoroughly mix the two.

Once the VeganEgg takes on the consistency of "scrambled egg chunks", add the GimmeLean + veggies.


Finally, add the Daiya and cook over low heat until the it's melted.

This is a fun breakfast to make, especially when you're craving that nostalgic "hardy breakfast" feeling.
