Chinese-Indian Fusion Tofu Stirfry

Ingredients List (screenshot for an easy shopping list):

Stirfry Sauce:
- 1 tbsp olive oil
- 2 cups vegetable broth
- 1/2 cup Hoisin sauce (or soy sauce)
- 2 tbsp ketchup
- 2 tsps garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1/2 tsp non-white sugar

Stirfry:
- 1 package high protein tofu
- 1 cup each of broccoli, potato, carrot, cabbage, spinach or kale
- 1/2 cup each of purple onion and bell pepper

Nutrition Information (per 1/3 recipe):

- 535 calories
- 31 g protein
- 60 g carbs (5 g fiber, 36 g sugar)
- 21 g fats (2 g sat fat, 0 g cholesterol)


Lightly brown the tofu in the olive oil over medium to medium-high heat.
Combine all sauce ingredients, bring to a boil, then cook over medium heat for about 10 minutes.

Combine the tofu and veggies, add the sauce and cook on high heat for about 5 minutes, then cook over medium heat  until most the sauce is absorbed, stirring frequently.

Top with jalapeño pepper slices and thai chili. 

This is an easy dish to make - only about 30-40 minutes from cutting board to bowl - and is very delicious!
