Garlic Roasted Vegetables

Vegan. Healthy. Delicious. Easy.

- 2 pounds vegetables (zucchini, squash, bell peppers, carrot, cauliflower, broccoli, green beans, sweet potatoes, etc.)
- 3 tablespoons garlic olive oil
- 1 tsp sea salt
- 1/4 tsp ground black pepper

Garlic olive oil, merlot sea salt & ground black pepper provide all the seasoning you'll need.

Thinly slice the vegetables and thoroughly mix them with the olive oil, salt and pepper.

Roast the vegetables in a single layer, with a little space between each, for 15-20 minutes at 425 F.

Serve the vegetables hot out of the oven.  So easy, so delicious, ready in 25-30 minutes.
