Tofu Fried Rice

Tofu Fried Rice

This fried rice is so full of flavors and textures, plus it's filled with healthy and fresh ingredients.

Ingredients (screenshot for an easy shopping list):

Rice & Vegetables:

  • 1 cup (8 ounces) tofu (quarter-inch cubes)
  • 1 cup FullGreen riced vegetable (warmed)
  • 4 cloves garlic (minced)
  • 1 cup (1 bunch) chopped green onion (chopped, including green stems)
  • 0.5 cup peas
  • 0.5 cup carrot slices
  • 1 tbsp soy sauce

Sauce:

  • 3 tbsp tamari
  • 1 tbsp sunflower butter (or peanut butter)
  • 3 tbsp maple syrup (or vegan brown sugar)
  • 1 clove garlic
  • 2 tsp spicy garlic seasoning
  • 1 tbsp oil (sesame, peanut, avocado, olive)

Garnish:

  • Raw cashews
  • Sriracha sauce

Air fry the tofu at 375 degrees F for 15-20 minutes, shaking the basket after each 5-minute segment.

While the tofu airfries, combine all of the sauce ingredients and whisk them over medium heat until they are well combined.

When the tofu is a light golden brown on the outside, remove it from the airfryer and add it to the sauce over medium-low heat.

Gently stir the tofu in the sauce for about 5 minutes.

While the tofu simmers, add a bag of the FullGreen rice to a microwave safe bowl and place in the microwave.  You will need to heat it for only about 1-2 minutes!  

Use a slotted spoon to remove the tofu, leaving most of the sauce behind, and cook it over medium-low heat until it's a dark golden brown on the outside, about 2-3 minutes.

Set the tofu aside, then saute the vegetables, in a small amount of oil, to your desired texture.

Add a tablespoon of soy sauce as the vegetables saute.  Total saute time is only about 8-10 minutes.

Combine the sauteed vegetables, tofu & sauce over medium heat.

Add the warmed rice and mix everything thoroughly over medium heat for a few more minutes.

Garnish with raw almonds and sriracha sauce.

    1. I'm glad you like it! I have to say (not to toot my own horn), this is the best tofu fried rice I've ever had. The sauce gave the perfect combination of flavors, the tofu was perfectly browned in the air fryer & the veggie rice worked perfectly.
