This amazing Greek Salad was not only fresh and delicious, but it brought back pleasant memories of my trip to Greece (Athens) and the Greek Isles (Kia & Mikonos). |

Salad
- 2 Vine Ripe Tomatoes
- 0.25 Purple Onion
- 0.5 English Cucumber
- 0.5 Bell Pepper
- 0.25 cup Kalmata Olives
- 2 oz. Vegan Feta
Dressing
- 1 tbsp Oil
- 1.5 tbsp Lemon Juice
- 1 clove Garlic
- 1 tbsp Fresh Cilantro or Parsley
- 0.5 tsp Dried Oregano
- Salt to taste
