Greek Salad

Vegan.  Healthy.  Delicious.  Easy.

This amazing Greek Salad was not only fresh and delicious, but it brought back pleasant memories of my trip to Greece (Athens) and the Greek Isles (Kia & Mikonos).


Ingredients List (screenshot for an easy shopping list):

Salad

  • 2 Vine Ripe Tomatoes
  • 0.25 Purple Onion
  • 0.5 English Cucumber
  • 0.5 Bell Pepper
  • 0.25 cup Kalmata Olives 
  • 2 oz. Vegan Feta

Dressing

  • 1 tbsp Oil
  • 1.5 tbsp Lemon Juice
  • 1 clove Garlic
  • 1 tbsp Fresh Cilantro or Parsley
  • 0.5 tsp Dried Oregano
  • Salt to taste

Nutrition Information (1/2 recipe):

  • 265 Calories
  • 2 g Protein
  • 13 g Carbs (6 g sugar, 2 g fiber)
  • 22 g Fats (8 g sat fat, 0 g cholesterol)
