Green Squash Soup with Vegan Italian Sausage

*** Note: you will need a blender or food processor to finish off this recipe.
- 1 medium leak (root and green stem cut off, diced into small pieces)
- 3 small green zucchinis (equallying about 1 lb, diced into medium sized chunks)
- 2 tablespoons of cooking oil (I used grapeseed oil)
- salt & pepper to taste
- 4 cups vegetable stock
- 1 tbsp dried marjoram
- 1/2 cup artichoke puree
- 1 link Tofurkey Italian sausage
