Asian Inspired Purple Cabbage Salad

Vegan.  Healthy.  Delicious.  Easy.


Lunch!  The cabbage salad is served with spinach + garlic balsamic, bell peppers, carrots, tempeh & garlic hummus.


Ingredients List (screenshot for an easy shopping list):

Salad:

  • 1/2 Purple Cabbage (cut into short strips)
  • 1/2 Cup Carrot (shaved)
  • 1/2 Cup Shallot (diced)
  • optional: Slivered Almonds & Sesame Seeds

Dressing:

  • 3 tbsp Oil (preferred: Sesame Oil, I used Grapeseed Oil)
  • 3 tbsp Rice Vinegar
  • 1 clove Minced Garlic
  • 1 tsp Ground Chinese Ginger
  • 1 tsp Cane Sugar (Note: don't use white sugar; it can't be verified to be vegan...see my article from January, 2020)
  • 1 tsp salt
  • 1 tsp pepper

Nutrition Information (1/4 recipe):

  • Calories: 137
  • Protein: 1 g
  • Carbs: 11 g (4 g sugar, 3 g fiber)
  • Fats: 10 g (1 g sat fat, 0 g cholesterol)
