Asian Inspired Purple Cabbage Salad
Vegan. Healthy. Delicious. Easy.
Lunch! The cabbage salad is served with spinach + garlic balsamic, bell peppers, carrots, tempeh & garlic hummus. |

Salad:
- 1/2 Purple Cabbage (cut into short strips)
- 1/2 Cup Carrot (shaved)
- 1/2 Cup Shallot (diced)
- optional: Slivered Almonds & Sesame Seeds
Dressing:
- 3 tbsp Oil (preferred: Sesame Oil, I used Grapeseed Oil)
- 3 tbsp Rice Vinegar
- 1 clove Minced Garlic
- 1 tsp Ground Chinese Ginger
- 1 tsp Cane Sugar (Note: don't use white sugar; it can't be verified to be vegan...see my article from January, 2020)
- 1 tsp salt
- 1 tsp pepper

- Calories: 137
- Protein: 1 g
- Carbs: 11 g (4 g sugar, 3 g fiber)
- Fats: 10 g (1 g sat fat, 0 g cholesterol)
